Sample Roaster

หลังจากที่รอคอยมานานหลายเดือนก็ได้ฤกษ์ต้อนรับเครื่องคั่วน้องใหม่เข้าบ้าน P&F เสียที Sample roaster ของ US Roaster Corp

ปีใหม่ปีนี้ตั้งใจไว้แล้วว่าจะใช้เวลากับเครื่องคั่วใหม่นี้ ซึ่งมีกำลังการคั่วไม่เกิน 450 กรัมต่อการคั่วแต่ละครั้ง เราสามารถทดลองคั่วได้บ่อยเท่าที่เราต้องการจะทดสอบ Profile การคั่วแบบต่างๆ จากเมล็ดกาแฟดิบที่หลากหลาย ของ P&F Coffee คาดว่าปีนี้ พี แอนด์ เอฟ คอฟฟี่ คงจะได้เริ่มผลิตเมล็ดกาแฟระดับ Specialty จากแหล่งต่างๆ ได้อย่างตั้งใจเสียที

ประเดิมวันนี้ เราทดลองการคั่วแบบเต็มกำลังการผลิตอย่างต่อเนื่องซึ่งได้ผลเป็นที่น่าพอใจ ในเรื่องความสม่ำเสมอของ Profile รู้สึกคุ้มกับเงินที่จ่ายไปค่อนข้างสูง เริ่มจาก เมล็ดจากบราซิล Vargem Grand , Kenya Lenana , Yemen Ismaili , Sulawesi , เมล็ดจากเชียงราย และเมล็ดจากประเทศเพื่อนบ้านอื่นๆ ซึ่งรายละเอียดของเมล็ดแต่ละชนิดหาอ่านได้ใน Coffee blog ของ พี แอนด์ เอฟ บ้างเคยเผยแพร่และบ้างกำลังทยอยออกมาให้ทราบกันในโอกาสอันใกล้นี้ ผู้สนใจเมล็ด Specialty ที่คัดพิเศษจากนักแสวงหามืออาชีพ กรุณาสอบถามได้ที่ พี แอนด์ เอฟ คอฟฟี่ หมายเลข 08 6789 2699

While I type this blog, today is New Year Eve, everybody celebrated the New Year count down but I have to count down with my sample roaster which I'd waited for more than 2 months from US Roaster Corp. The capacity is 450 gram for each batch and I tried the maximum for several batches simultaniously and the result is quite perfect.

We chosed this machine because it's similar with our 15 Kilograms roaster with some reason. First, we could develop our consistancy profile by imitate from this sample to our roaster. Second, we could find the most impact of each green bean we've got in hands.

Today we roasted Yemen Ismaili, Brazil Vargem Grand, Kenya Lenana, Sulawesi and some others of Selected bean from Chiangrai and our neighbour countries.

Begining of 2008, we wish to have our best blend for our "Splendid", "Mad Dog" and etc. We always welcome anyone who interested in our cup of excellent and selected bean by making appointment to us at Tel# 08 6789 2699

ขอแสดงความอาลัยอย่างสุดซึ้ง

ในเวลา 02.54 น.ของวันที่ 2 มกราคม 2551 เป็นเวลาที่สุดเศร้าของปวงชนชาวไทยทั้งประเทศที่ได้สูญเสียบุคคลอันเป็นที่รักยิ่งไปอย่างไม่มีวันกลับ สมเด็จพระเจ้าพี่นางเธอ เจ้าฟ้ากัลยาณิวัฒนา กรมหลวงนราธิวาสราชนครินทร์

พระราชกิจต่างๆที่พระองค์ทรงได้แบ่งเบาจากสมเด็จพระเจ้าอยู่หัวฯ และโครงการส่วนพระองค์ต่างๆที่เราชาวไทยต่างสำนึกในพระคุณของพระองค์ท่านที่ได้ทรงปฏิบัติและทรงช่วยเหลือประชาชนชาวไทยมาแสนนาน

ผู้เขียนเคยได้เป็นนักเรียนศึกษาวรรณคดีฝรั่งเศสกับพระองค์ท่าน ที่คณะมนุษยศาสตร์ มหาวิทยาลัยเชียงใหม่หลายปีก่อน วันแรกที่พระองค์เสด็จมาทรงสอน ข้าพเจ้าฯ เข้าห้องเรียนช้ากว่าพระองค์ท่าน ทำให้รู้สึกอึดอัด แต่ท่านก็ไม่ได้ตรัสสิ่งใด ยังคงสอนวรรณกรรมของนักเขียนนามอุโฆษ Antoine de Saint-Exupéry ในวันนั้นพระองค์ได้ทรงสอนเรื่อง Terre des Hommes ซึ่งถือเป็นผลงานชิ้นเอกอีกชิ้นหนึ่งของนักเขียนท่านนี้ ความตอนหนึ่งพระองค์ทรงตรัสถามว่า "รู้มั๊ยว่า ทำไมเราต้องเรียนคณะมนุษยศาสตร์?" ตอนนั้นข้าพเจ้ารู้สึกเกร็งจากการเข้าห้องเรียนช้า รู้สึกอายมากโขอยู่ จึงไม่กล้าตอบ ท่านจึงตรัสต่อว่า "ครูอยากให้พวกเธอเป็นมนุษย์มากกว่าคน และจะเป็นมนุษย์ที่ดีได้ ต้องมีความรับผิดชอบ ในทุกๆสิ่งที่เราได้เข้ามามีส่วนร่วม "

ในวันนั้นพระองค์ท่านเล่าเนื้อหาของวรรณกรรม ที่ Antoine de Saint-Exupéry ถ่ายทอดออกมาในแนวปรัชญาผ่านอาชีพบุรุษไปรษณีย์ที่เกิดอุบัติเหตุเครื่องบินชำรุด ตกอยู่ท่ามกลางหิมะทะเลทราย โดยมีถุงจดหมายและพัสดุของคนอีกหลายคนที่ต้องการส่งถึงกัน ความยากลำบากอย่างแสนสาหัสที่ผู้เขียนพยายามบอกเล่าถึง "หน้าที่ความรับผิดชอบ" ต้องเดินเท้าท่ามกลางหิมะด้วยเหตุผลเดียวสำหรับการอยู่รอด เพื่อจดหมายและพัสดุเหล่านั้น

การที่พระองค์ไม่ได้ทรงลงโทษการมาช้าของข้าพเจ้าในวันนั้น แต่สิ่งที่พระองค์ทรงยกตัวอย่างวรรณกรรมชิ้นนั้นต่อข้าพเจ้า ทำให้ข้าพเจ้าเข้าใจ ระลึกถึงพระองค์และยึดถือเสมอมา จวบจนทุกวันนี้ เพียงเพราะประโยคที่ว่า L'humanité est responsibilité หมายความว่า "ความเป็นมนุษย์หมายถึงมีความรับผิดชอบ" และพระองค์ได้ทรงเป็นแบบอย่างที่ดีมากสำหรับคำนี้ ซึ่งข้าพเจ้านำมายึดถือปฏิบัติต่ออาชีพคนคั่วกาแฟจวบจนทุกวันนี้

ขอให้พระองค์เสด็จไปสู่สรวงสวรรค์ ด้วยเทอญ

My Dearest Princess

All Thai people were sad in receiving bad news about our dearest princess Her Royal Highness Princess Galyani Vadhana , His Majesty the King's eldest sister, last night for her death.

I recognized her philosophy teaching when I was a student in Faculties of Humanities, Chiangmai University. Once, I attended her French Literature class and I came late. Her Royal Highness princess didn't get angry but asked me why I had to study in this faculty? I couldn't get any good question so she told me "To be good human, everyone must have responsibility of his own"

During the class, she taught us "Terre des Hommes" which written by Antoine de Saint Exupery. The climax of this story teach us about "responsibility". The postman in this story have duty to distribute all letters and parcels inside his sac. But he got accident and fall into the wide area of snow. He extremely make courage to walk and walk for only little hope to see somebody who could carry the parcels and letters. In his mind is only "Responsibility" to send all thase things to anothers who are waiting for them. Since that day, I've realized that "Responsibility" is the MUST for my job and my way of life.
